Citrus and dusty crushed stones. Lightly herbal. A creamy texture on the palate balances the crisp citrus. Clean-cut, balanced, not terribly long and slightly sour on the very end. (JH)

The 2021 Chablis AC bottling from Celine and Frederic Gueguen is another strong example. The bouquet is deep and classy, offering up scents of green apple, fresh lime, dried flowers, wet stone minerality and a nice topnote of citrus peel. On the palate the wine is bright, full-bodied and complex, with a good core of fruit, fine soil inflection, zesty acids and fine focus and grip on the long and complex finish.
Anticipated maturity: 2023-2040
Notes of tidal pool, apple, citrus and quinine give way to slightly bigger and richer flavors that possess an attractive mid-palate texture while exhibiting plenty of punch on the saliva-inducing finish. This should also be enjoyable young.
The 2021 Chablis Village has a tightly-wound, quite stony bouquet that unfurls with aeration, demonstrating fine breeding. The palate is well balanced with a saline entry; the 2021 has a fine sense of energy and harmony – all it lacks is much in the way of persistency. It should drink well for several years.
